Pumpkin is often a disliked Vegetable in many houses. Combining it with some other veggies convert this nutritious, fibre rich, vegetable into a sumptuous soul satisfying soup.
Ingredients:
Pumpkin Pieces – 2 Cups
Tomatoes – 2 Nos.
Carrots – 2 Pieces
Ginger- small piece
Pepper
Fresh Cream
Salt (as per taste)
Sugar (as per taste)
Method:
Cook chopped carrots and pumpkin pieces and tomatoes together in a cooker or cooking vessel
Allow it to cool to room temperature
Now, grind the cooked pumpkin, carrots, tomatoes, and ginger into a fine paste.
In a cooking vessel, pour the mixture and bring it to boil. If the mixture is too thick, add some water to it.
While the mixture is boiling, add a pinch of salt, half tea-spoon sugar, some freshly ground pepper and some fresh cream
Tadaaa…The soup is ready to be savoured.
Garnish it with coriander or grated cheese as you find appropriate!
